Pumpkin muffins (w/cottage cheese) & sweet potato hash with sausage and spinach

That’s so yum. I put cottage cheese in my scrambled eggs and it’s so satisfying

Omg can I have the recipe for the hash? Did you do something specific to the egg? It all looks soo good

I used -3 medium sweet potatoes, peeled and diced to your size liking -1 pound of Italian sausage (sweet or spicy) -1/4 yellow onion, diced -3 handfuls (🤷🏻‍♀️ lol) of spinach, roughly chopped - 6 to 8 eggs Heat oven to 400 degrees. Roast sweet potatoes in a sheet pan with olive oil and any seasonings you like for about 45 minutes. While potatoes are roasting, cook your Italian sausage. Drain out the fat. Once potatoes are cooked, toss in the sausage, onion and spinach. Toss until all ingredients are combined then make 6-8 reservoirs, add a little oil and crack your egg right in the reservoir. Place it back into the oven and bake the eggs to your preferred consistency. I did over hard here, but some of the eggs yolks were still runny (my favorite). I hope I made sense 🤭😅
