Cheese & Broc-cauli Potato Pancakes / Yogurt / Pears

I’ve been trying to get my toddler to cross the picket line (vegetable strike) but I haven’t been cooking as much lately. My baby’s in a handheld foods phase.

Look nice. Did your toddler like them? Can I have the recipe please?

My baby LOVED it :-) If I would change it any, I would add more baking powder, probably doubling it or even tripling. I would also just go with half of the cream cheese, or alternatively maybe 12 rather than 16 ounces. The balance was really nice, and was very thick once cooled. Also, you can switch up the cheeses, I just used what I had. Here’s the recipe, with photos: I winged it but took notes. 1 bag of frozen rainbow cauliflower 1 bag of frozen broccoli 2 small onions, caramelized • caramelize the onions first, then set aside. • cook the broccoli and cauliflower very lightly with a bit of salted butter (don’t add salt) • combine, purée, and set aside

16 ounces of cream cheese 8 ounces of cheddar cheese, shaved ~4 ounces of shaved asiago, Parmesan and Romano cheese mix ~ a bit of chicken bone broth • Add chicken broth and cubed cream cheese to a pot and lil then reduce heat, stirring and mashing until well mixed • Stir in cheese mixes, leaving half of the cheddar aside • Turn off heat and add the cauliflower purée • Mix well and add the rest of the cheddar, stirring it in once the temperature is at a point where it won’t really melt • Add an equal mixture of garlic, onion powder, and paprika with a bit of pepper to taste. No need to add salt. • Refrigerate

4 cups of seasoned mashed potatoes 1 egg 1/2 cup whole wheat flour 1/4 tsp baking powder 1/4 tsp baking soda 1/4 tsp salt • Combine well and add roughly equal parts of the cheesy broccoli cauliflower and more flour as needed until they are easily rolled into balls. Roll in seasoned flour, mash and fry :) * you may want to create markings like a grid with the spatula across one side of the cake to help it cook more evenly (do this while the pancake is cooking, but before flipping it).
