This is one of our favourite weekday family meals, my take on a paella. But I only use chorizo, loaded with veggies, whole family loves it. And I also top mine with a mountain of feta, and chilli oil, trust me it's lush.

@Tia of course! Fry off a whole ring of chorizo with olive oil, add in 2 chopped white onions, 2 bell peppers and 3 cloves of garlic. Fry this off til onion and pepper is soft. Next you add tinned chopped tomatoes. Then one chicken stock cube. Add amount of paella rice (I use around 3/4) of 500g for a family of 4 that eats alot. Fry the rice off with the mixture. You have to add water gradually with paella rice and also stand there mixing otherwise it does stick. I add a cups worth each time, and stir throughout the cooking process. I add paprika, tomato pure, salt to taste (not alot chorizo and stock has alot). Once the rice looks almost cooked I add about a cup full of peas and a cup full of sweetcorn. Top with feta and a drizzle of chilli olive oil 👌😋
