Hidden veg recipe

I’d really like to make a pasta sauce full of veg, can anyone please share a recipe they have used? 😊

I make my own sauce for spaghetti Bolognese. 500g pasata sauce 1 tin of plum tomatoes 2 carrots 2 sticks of celery 5/6 garlic cloves 8 button mushrooms 1 medium onion 1 tsp basil 1 tsp oregano 1 tsp mixed herbs 1 tsp paprika 1 red wine stock pot (theres no alcohol in them) 2 low salt Oxo cubes Pepper to taste. Enjoyed by both my 8 year old and my 22 month old.

We dont eat much pasta but whenever i make it i always load it up with whatever i have in the fridge. Always start with the onion carrot and garlic and then whatever else is in the fridge like pepper, courgette, mushrooms, kale, chard, spinach etc. Soften it all a little and then use tinned chopped tomatoes. Salt, pepper, mixed herb and a spoon of sugar to balance the acidity. Then if i have cream cheese/mozzarella/marscapone/ricotta or just cream i will put it in. Sometimes i put chickpeas or beans in too for protein. Finish with about 3/4cup pasta water and just simmer it all on low for a little bit. We eat it as it is with but you can blend it up and use it as a sauce.

We have a basic one that works every time: 1x carrot cut into discs then quartered 1x small onion 1x celery stick chopped up 1x tin of chopped toms Tom purée Garlic Basil Mixed herbs Oregano Bit of tom k Bit of sugar to remove tartness

Spinach, broccoli and cheese is always a hit Also do Tomatoes, Peppers, Carrots, garlic, mushrooms and what ever else may be lying around and that's a hit too

I cook carrots and sweet potato and then blend with chopped tomatoes, mix into pasta and sprinkle on cheese. If you’re feeling really fancy cook some broccoli and then blitz it up into ‘green sprinkles’ and give in a little bowl to your toddler and let them sprinkle it on
