I use a lot of recipes by Annabel Karmel. She is a specialist on weaning and toddler food and often does recipes that include “hidden veggies”. They’re often great for the whole family too! I subscribe to the app (which I think is about £2.99 a month) but I use it all the time.
I roasted a load of peppers, onions, tomatoes, carrot and courgette, blended it up and mixed it with milk, made a stunning pasta sauce and even soup for me!
If im doing pasta sauce i try to add sweet potato as it takes the acidity away from the tomatoes and also adds a good boost of iron. I chuck whatever veg i have handy in the air fryer to roast it (or use leftover roast veg as we have it with meals quite a lot) then just wing it into a sauce.
