Chicken Riggies

This is a local favorite where I live. It’s a Pasta dish with Rigatoni, chicken, roasted red peppers and hot cherry peppers, mushrooms, olives, onions and garlic. It’s very similar to a Vodka sauce. 😋

@Jaylyn I kind of just eyeball it 😂 Here are the ingredients: I box of Rigatoni. (Boil per directions for Al dente) 2 small 15 oz cans of tomato sauce 🥫 I 14 oz can of diced tomatoes 3 garlic cloves minced 1 medium onion 1 package of mushrooms washed and cut up Olive oil Flour Roasted red peppers jar Hot cherry peppers. (Start small and taste! It can get hot 🥵 quickly) 1 cup half and half or heavy cream Cook onions, garlic, peppers, and mushrooms in olive oil until onions are soft. Cut up chicken into bite size pieces and then lightly flour. Cook chicken in same pan as veggies. (You may have to add olive oil or a little water if it’s too dry) Add sauce and diced tomatoes. Add half and half or heavy cream. Salt and pepper to season. Add some Italian seasoning and stir. Add pasta and cook on low for a bit. Add whatever cheese you like on top, or when you serve. This sometimes tastes better the next day! You should have leftovers unless you are feeding a lot of people.
