What are we eating for (easy, healthy) dinner tonight everyone?

I'm running out of ideas 😭 anyone know some good meals that are well-balanced and decently healthy, come together easily, and don't use every dish in your kitchen? Hit me with some fresh ideas please

I’m making 🌈 chard soup with 🍅 & chili pepper, with some pickled fried fish (im not sure how to translate this dish into English 😅) & right now I’m eating blackberry goji apricot 🍏 popsicles I made yesterday so cooking isn’t such torture 😂 we don’t have ac & it’s so hot here

@Lesya that all sounds really tasty. Those popsicles sound like a big win. We have AC but it's still hot because we live in Arizona and can't afford enough AC to truly make it comfortable, so popsicles are a welcome recommendation too

I like Martha Stewart's one pan pasta for when idk what to cook. I usually add a protein and extra veggies too.

@Jessica yeah I had a lot of fruit still in fridge and they were all very sweet (usually a good thing but these days anything more than a little sweet kicks up my nausea like crazy unless it’s even more sour at same time 😆 so I just muddled it them together with a tiny pinch of salt and added the goji for a little extra crunch

@Kellie man I love rice paper rolls but usually I do them vegetarian so this sounds like a tasty way to switch it up.

I made some chicken and steamed vegetables simple but tasty 😋

I have been doing a roast chicken lately and put carrot potatoes and green onion on the bottom so you have veggies and protein. If I have energy or already I’ll do a nice bread or rice to go with it.
