@Roxanne I love oatmeal pancakes idea. I tried several options of cooking eggs. The only thing he eats is a toast soaked in mashed raw eggs and fried on the pan (so it is more bread than eggs).
My baby has always hated oatmeal/baby cereal so we gave up on that a long time ago lol. My baby is allergic to eggs so a super easy breakfast staple in our house is full fat plain greek yogurt with strawberries, sliced avocado with hemp seeds (to help make them less slippery and add protein and fiber), and beans with chicken breakfast sausage. It’s very filling, balanced, and requires little to no cooking!
My go to’s are: Breakfast - Banana pancakes; 1 ripe banana mashed, 1 egg and 2 tbsp flour. All mixed together and I do 1 tbsp of mixture at a time for mini pancakes. I will also put peanut butter (no salt) on top for some extra fat/protein. Lunch - whole grain toast with cream cheese, mixed vegetables (frozen and super quick and easy in the microwave), a whole peach peeled for dessert. Dinner - whatever we are eating plus something I know she will eat and fruit. If she’s still hungry I will offer a pouch. I will follow here for some inspiration too 😊
Have you tried making the eggs differently(boiled or fried)? My son has gone back and forth on what he likes lately. For veggies I try to get him to eat a blended pouch/smoothie thing and still offer the whole piece of whatever at dinner or whatever. Avocado is a fav and super fatty but also he loves a piece of plain toast with nice butter on it which has good fats. He hates cows milk so we tried almond and he loooves it. And he also has never liked the baby oatmeal so I use it like pancake mix and crack a couple eggs and mash some fruit and just cook it like pancakes
