How should I respond?
My MIL says this every-time I see her and it annoys me because she makes it sound like she never holds my child or spends time with him which is far from the truth.
She says, " I haven't gotten to build up my baby muscles".
My son is 2yrs old and doesn't even like being held for long periods like that anymore.
What's a good response/ comeback?

I’d put it back on her to elaborate. “What do you mean by that?” if she says she never gets to spend time or hold or whatever, just list your examples. if she’s being passive aggressive most of the time what I’ve noticed when you call them out they just back down and change the subject.
My response would be your got the lucky job as the grandparent get to all the playtime no need to build the muscles 💪
