I've made oatmeal banana prune and spinach muffins with spinach to give my 10 month old. He doesn't like sitting for meals either. So I've tried to pack as much as I can into the muffins.
Pastry pin wheels - can go veg or fruit, my LO loves them and soo quick and easy to do (I cheat with the ready to go rolled stuff)
I second the pinwheels with puff pastry (shop bought lol🙋🏼♀️) my son’s favourite is cheese and tomato but you can put veg in there, cream cheese etc
My baby love everything dry, just try making veggies tots, there are many recipes online, eggless, with egg, just broccoli, berry mixed, it quite fun to try all those recipes, you can bake them and save it for later too

My quick go to "snack" is peanut butter 🥜 spread on half a whole wheat tortilla- fold it up and cut into 8 pieces. If you want to you can probably add some mashed 🍌 or a good sugar-free jam to make a low mess PB&J.
