I wouldn't bother yourself going down that rabbit hole unless you have to. I was diagnosed yesterday and honestly ever since I haven't stoped crying because of the stress of how enormous it seems to be re-learning what I can and can't eat! Exhausting. Hopefully you can walk away without it!
Check out this website, best source of info I've found. There is a Facebook group that goes with it too. https://www.gestationaldiabetes.co.uk/
Good luck with your results! When I first got diagnosed I was so annoyed but, it does get better and I honestly feel better in myself with the changes I’ve made. It’s not a one size fits all as we all react to foods differently so, I’d use the first few days as trial and error to see what works or doesn’t work for you. For me personally, brown seeded bread and baby potatoes are fine. Basmati rice was a no and I haven’t tried pasta as I think it would be the same as rice. A typical day for me is, Greek full fat yoghurt with some blueberries and chia seeds for breakie, two slices of seeded Wholemeal with either bacon or egg inside or even made into a sandwich and then dinner has been some form of meat or fish (no batter) with salad and baby potatoes. For treats I’ve got sugar free jelly, some sugar free biscuits j ordered off amazon and a keto choc cake mix that I’ve made fairy cakes out of. I feel full after each meal and feel good. You’ve got this
The gestational diabetes subreddit has a bunch of threads with snack and meal ideas and food pairing advice- I find it super useful to just search on there. If you have a partner having them eat the same as you had been helpful for me, along with a list of snack options so I don’t have to think as much when I’m hungry. Oh also make sure to wash your hands before testing especially for the dreaded fasting number, it can really change your sugar reading which is wild!
