GD recipes or recommendations?

Got diagnosed with GD on Friday and have been feeling so gloomy about not being able to eat what I want 😩😩 Also really struggling with ideas of what to have for my meals. Does anyone have any recommendations for meals they enjoy for breakfast, lunch/dinner? I think I just really need some inspo.

I've just been diagnosed too, I've found it not to be as drastic as a change as I've thought. Seems breakfast is the biggest difference for me. Dietician said to try cheese on brown toast, avocado on brown toast, bacon on brown toast, sugar free biscuits crushed up with certain types of yoghourt and fruit. As for dinners I'm just swapping potato for sweet potato, cauliflower rice for rice and whole grain pasta. Nuts are a great snack, certain cereal bars are fab too.

Breakfast is my worst meal. I was really enjoying egg and turkey bacon sandwich on seeded bread but I quickly stopped tolerating them even with tiny slices of bread. Currently my go to, is melon, an apple or a pear with Greek yogurt for breakfast with some cheese after. I can tolerate sandwiches on seeded wholemeal bread, or wheat rolls, either like ham cheese or tuna mayo or chicken with salad in it, I will have cheese on the side if not in sandwich, veg sticks, and random other stuff with it. I can tolerate 60g of carbs for lunch and dinner without getting a result above 6.5 most of the time. Dinners I've had meat with seasoning, with veg sticks or salad (baby still won't let me eat cooked veggies) the occasional yorkshire pudding or slice of bread. I've found just lowering carb heavy food and eating my normal meals works. I swapped to wholemeal/grain bread and pasta and using no added sugar sauces because I don't have the energy to make my own.

I am also a very fussy eater and usually struggle to eat much meat or cheese due to texture but I know that eating those helps me balance my sugars and I am actually starting to like them.
