I’m also on a bit of a health journey for myself and I feel like we can over complicate or feel overwhelmed trying to figure out being healthy. My advice is to make small changes. I find if I continuously make sure I have fresh spinach and cherry tomatoes, that the other stuff like sunflower seeds, croutons and dressing don’t run out or go bad as quick. I’m also cleaning out my fridge often to keep it from feeling overwhelming and cluttering my brain. I hope this helps and good luck!
I meal-prep as much as a can. This means that I just buy what I know I'm going to cook that week and I make a larger portion bc my dinner leftovers are my lunch the following day. One day when you have a moment, make a list of the foods you know how to cook that your family enjoys eating and figure out how to make it healthier. Example: spaghetti and meatballs. Can you replace the beef meatballs to turkey? Instead of regular pasta can you replace with veggie pasta? You don't need fresh veggies all the time, frozen veggies work just as well as a healthy food choice to keep on hand.
Every week I hard boil 4 eggs cause I know I will want a salad at least 4x for the week. I always keep sunflower seeds, dried cranberries, cherry tomatoes, shredded carrots, feta cheese, olives and a spinach greens mix on hand. To make the salad I just cut up some of the tomatoes and the egg and pile the rest together. Great for eating lunch during nap time 😄
